Each delicious dish is cooked in the Balti of cast iron or a stainless steel wok. A Balti is a small saucepan with a handle on either side, which has been handed down by the tribesmen of the Khyber Pass who cooked their food this way upon an open fire.

Each dish ordered is individually cooked and served in its own Balti which enhances the flavour and aroma of this type of dish. Spices and green herbs such as coriander combine to make a different and special alternative to any other style of Oriental cooking.
